Easy One-Pot Shipwreck Dinner

This kid-friendly, no-fuss one-pot meal is perfect for busy nights when you want a hot and filling dinner without spending hours in the kitchen. It’s not gourmet, but it’s tasty and satisfying. Plus, there’s minimal prep work involved – just open some cans and unwrap your meat.

Ingredients:

  • 1 lb lean ground beef
  • 1 package (7.25 oz) macaroni and cheese mix
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup milk
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 tsp seasoned salt (such as LAWRY’S®), or to taste
  • 1 cup shredded Cheddar cheese, divided

Directions:

  1. Heat a large skillet over medium-high heat. Add the ground beef and cook until browned and crumbly, about 5-7 minutes.
  2. Stir in the pasta and cheese mixture from the macaroni and cheese package, as well as the canned tomatoes, milk, peas, and corn. Mix everything together.
  3. Bring the mixture to a boil, then reduce the heat to medium-low. Cover the skillet and let it simmer for about 12 minutes or until the noodles are tender.
  4. Season the dish with seasoned salt. Stir in half of the Cheddar cheese to melt.
  5. Sprinkle the remaining Cheddar cheese on top of the dish and let it melt.
