Stuffed peppers are a classic dish that is perfect for a cozy dinner at home. This recipe is a twist on the traditional stuffed peppers, with a flavorful filling of ground beef, rice, and vegetables. Ingredients:

  • 6 bell peppers, any color
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese

Directions:

  1. Preheat the oven to 375°F.
  2. Cut off the tops of the bell peppers and remove the seeds and membranes.
  3. In a large skillet, cook the ground beef over medium heat until browned.
  4. Add the onion and garlic and cook until softened.
  5. Add the cooked rice, diced tomatoes, oregano, basil, salt, and pepper. Stir to combine.
  6. Stuff the mixture into the bell peppers and place them in a baking dish.
  7. Cover the dish with foil and bake for 30 minutes.
  8. Remove the foil and sprinkle the shredded cheese over the peppers.
  9. Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  10. Serve hot and enjoy!
